Windsor Cakes

Windsor Cakes (makes 12) EASY

75g ground arrowroot
75g cornflour
75g plain flour
75g ground rice
75g caster sugar
75g butter diced
2 lg eggs
One and a half tsp baking powder

1. Oven to 180’, Mk 4
2. Mix arrowroot, cornflour, plain flour and ground rice together
3. Cream butter and sugar together, then beat eggs into butter mix one by one, then fold into flour mixture
4. Spoon into 12 paper cake cases and bake in centre of oven
