Whoopie Pies (makes 12) EASY

250g plain flour
1tsp bicarb
quarter tsp salt
1 egg
5tblsp unsweetened cocoa
200g caster sugar
180ml milk
125ml vegetable oil
1tsp vanilla extract

For buttercream
120ml milk
Two and a half tblsp plain flour
1 pinch salt
110g unsalted butter
100g caster sugar
1tblsp vanilla ext

1. Oven to 180’/Mk 4. Grease 2 x 12 hole bun tins
2. Sift together flour, bicarb, salt, cocoa and sugar
3. In a mixing bowl, stir together egg, oil, vanilla and milk till well blended. Gradually stir in dry mix
4. Should be 24 tablespoonsful to drop into the bun tins
5. Bake 10-12mins till firm, cool in tins 5mins then transfer to racks to cool completely
6. To make buttercream, whisk together milk and flour in a medium saucepan. Cook over med-high heat stirring frequently until thick. Remove from heat and set aside to cool.
7. In medium bowl, beat together butter, sugar, salt and vanilla. Stir into cooked milk mixture and beat until really fluffy (could be quite a while!).
8. Sandwich 2 whoopy discs with the buttercream filling
