Queen of Hearts Jam Tarts (makes c12) EASY

225g pl flour
115g butter Jam/lemon curd
Caster sugar

1. Oven to 200’, Mk 6. Grease a 12-hole tart tin
2. Sieve flour into mixing bowl, add cubed butter and rub in until mixture resembles breadcrumbs
3. Mix in 1-2tblsp cold water with a knife, a little at a time. Stir with knife till mix comes together – form into a ball, cling film and refrigerate 30mins
4. Roll pastry out to 3-5mm thick, dusting with flour to prevent sticking. Dip cutter in flour and cut 12 circles, place in greased tin and prick bases with a fork
5. Add 1tsp jam or curd in each tart then cut 12 tops from the scraps with a heart-shaped cutter and press gently in place. You can brush tops with milk or beaten egg if you want
6. Bake 10-12mins, cool a few minutes then lift tarts onto cooling rack with palate knife, leave till cooled and store in airtight tin till needed
