Maids of Honour (makes 18) FAIRLY EASY

250g bought puff pastry Icing sugar for dusting
Flour for dusting
225g curd cheese
40g candied peel
40g golden caster sugar
Grated zest 1 lemon
25g ground almonds
1lg egg+1lg egg yolk
c2tblsp lemon curd

1. Oven to 200’, Mk 6. Cut pastry in half to make 2 squares. Sprinkle work surface with flour and roll each piece into a square c28cm x 28cm
2. Use an 8cm cutter to cut 9 circles from each square – but don’t twist the cutter!
3. Place the circles in 1×12 and 1×6 hole tart tins
4. In a bowl, combine curd cheese, sugar, lemon zest, ground almonds and candied peel. Beat the egg and egg yolk together in another bowl and add to other ingredients. Mix thoroughly with large fork till all well blended.
5. Spoon ONLY half a teaspoon of lemon curd into the base of each pastry case, followed by 1 dssrt spoonful of the mix in (5) above until all mix used
6. Bake in centre of oven 20-25mins till well puffed up and golden brown
7. Remove from oven and cool on rack. Don’t worry if they sink a little, it’s normal. Dust lightly with icing sugar before serving if desired
