Ginger Nobs (makes 12-14) EASY

60g butter
60g golden syrup
30g golden caster sugar
120g pl flour
40g fine oatmeal
1tsp ground ginger
1tsp bicarb
Pinch salt

1. Oven to 180’, Mk 4
2. Melt butter and syrup in pan, add sugar, cool a few minutes
3. Sift in flour, oatmeal, ginger, bicarb and salt, then combine into a soft ball.
4. Line a baking tray with parchment; break off walnut-sized pieces of dough, flatten into circles 1cm thick and place apart on tray (C12-14 – they will spread, so leave space between, or use 2 trays)
5. Cook 10 mins centre oven then cool so they go crunchy, store in airtight tin
