(Duke & Duchess of) Sussex Rock Cakes

(Duke & Duchess of) Sussex Rock Cakes (10-12) EASY

350g plain flour
quarter tsp salt
2 tsp baking powder
175g brown sugar
1tsp ground nutmeg
1tsp mixed spice
175g butter
125g dried fruit/mixed peel
1lg egg
1-2tblsp milk if needed

1. Oven to 190’, Mk 5. Line a baking sheet with parchment
2. Mix flour, salt, baking powder and sugar in a bowl, ensuring no lumps, then add spices and rub in butter
Till resembles fine breadcrumbs
3. Stir in fruit/peel, then break egg into small bowl, whisk lightly and add to dry mix.
4. Stir till stiff dough forms (may need to add 1 or max 2 tblsp milk).
5. Using 2 forks, pile mix into irregular heaps on the baking sheet
6. Bake centre oven 18-20mins till golden brown, cool for 1-2mins on tray then remove to wire rack
7. When cool, store in airtight tin
