Chocolate Brownies

Chocolate Brownies (makes c15) EASY

180g plain flour
3tblsp cocoa powder
quarter tsp salt
300g dark chocolate (70% solids)
200g unsalted butter
150g caster sugar
220g brown sugar
4 eggs
1tsp vanilla

1. Oven to 180’/Mk 4. Grease and line baking tin 33cmx23cm, sift flour, cocoa and salt into a bowl
2. Set a pyrex bowl above simmering water, melt butter and chocolate together for about 5mins till smooth
3. Remove from heat and whisk in sugars, then eggs and vanilla extract
4. Carefully fold in (not whisk) flour, probably 10 good foldings will do. Pour into prepared tin, bake 30mins
5. Remove and cool in tin, marking lightly into 15 squares as it cools. When cold, remove from tin and cut into squares, store in airtight tin.
